Cocoa cookies

I got back to baking today. I haven’t done much of it the last few weeks because of the holidays. I had some really excellent Ghirardelli cocoa powder leftover from the batch of chocolate vodka I’m making. I wanted to use it up, so today I made cocoa cookies. My mom made these when I was a kid, and they totally remind me of that. My friend JF remembers them too…these and the Mrs Holmes sugar cookies.

I love using my KitchenAid stand mixer. First, cream butter and sugar together.

Add buttermilk, vanilla and one egg and mix well. Add flour, baking soda and cocoa, and mix well.

Drop by spoonfuls on ungreased baking sheet.

Bake and enjoy the awesomeness! Easy peasy.

I dusted them with powdered sugar when they had cooled, but of course I forgot to take a picture of that. You’ll have to use your imagination.

These actually are not my favorite cookies. I mean, they’re really good; they’re just a bit too chocolately for me. A little too rich. But everyone else I know that’s tried them loves them. So give it a go!

Cocoa Cookies

Ingredients:
1/2 cup butter
1 cup sugar
3/4 cup buttermilk
1 tsp vanilla
1 egg
1.75 cups flour
1/2 tsp baking soda
1/4 cup cocoa

Preheat oven to 400 degrees. Beat together butter and sugar. Add buttermilk, vanilla and egg and mix well. Add flour, baking soda and cocoa and mix well. Drop by spoonfuls on ungreased cookie sheets. Bake 8-10 minutes or until set.
